Tzatziki Sauce

How to make TzatzikiSauce

Prep time: 10 minutes | Cook time: 0 minutes | Makes about 2 cups

1 cup shredded cucumber, seeded and grated
1 cup low-fat, plain Greek yogurt
1 tablespoon extra-virgin olive oil
1 tablespoon fresh dill
1 tablespoon freshly squeezed lemon juice
1 garlic clove, minced
Salt
Freshly ground black pepper

1. Using paper towels, pat dry the cucumber shreds, removing as
much liquid as you can.

2. In a large bowl, mix the cucumber, yogurt, olive oil, dill, lemon
juice, garlic, and salt and pepper to taste.

3. Serve immediately, or refrigerate in an airtight container for up to 5 days.
