Turkey, Zucchini, and Tomato Hash

Prep time: 5 minutes | Cook time: 15 minutes| Serves 4

1 tablespoon extra-virgin olive oil
8 ounces lean ground turkey
2 cups zucchini cut into ½-inch dice
1 cup canned diced tomatoes, drained
½ cup diced onion
¼ teaspoon salt

1.In a large skillet, heat the oil over medium heat. Place the ground turkey
in the skillet and cook, stirring frequently, for about 5 minutes, until
browned. Remove the turkey and place in a small bowl. Set aside.

2.Place the zucchini, tomato, and onion in the skillet and cook for 7 to 10
minutes, stirring occasionally, or until the onion is translucent and the
zucchini is soft. Add the salt and mix well.

3.Remove from the heat. Combine the turkey and vegetables and serve.
