Smoked Pork Chops with Pineapple

Prep time: 15 minutes | Cook time: 20 minutes| Serves 4

Butter-flavored cooking spray
1 pound lean, precooked smoked boneless pork chops or ham steaks
½ cup chopped onion
1 tablespoon balsamic vinegar
2 teaspoons concentrated chicken broth
½ cup water
brown-sugar artificial sweetener (1 teaspoon equivalent)
½ cup diced fresh pineapple
½ teaspoon chili powder

1. In a large nonstick skillet, heat cooking spray over medium-high heat
until hot but not smoking. Sauté pork for 2 minutes on one side, turn, and
cook for 2 minutes on the other. Remove from pan and keep warm.

2. Add onion to pan and sauté for 2 minutes, or until soft.

3. Add balsamic vinegar, concentrated chicken broth, water, and
sweetener, and stir to scrape up any browned bits. Stir in pineapple and chili powder, lower heat, and simmer for 3 minutes.

4. To serve, spoon pineapple sauce over smoked pork chops.
