Indonesian Braised Pork

Prep time: 15 minutes | Cook time: 15 minutes| Serves 4

1 pound lean pork tenderloin
Canola cooking spray
½ cup chopped shallots
½ teaspoon Asian chili paste with garlic
1 tablespoon minced fresh ginger
1½ tablespoons light soy sauce
1 cup light unsweetened coconut milk
2 tablespoons fresh lime juice

1. Slice tenderloin in ½-inch-thick slices.

2. In a medium nonstick lidded skillet, heat cooking spray over mediumhigh
heat. Brown pork for about 1 minute on each side. Add shallots and
sauté until golden.

3. In a small bowl, mix chili paste, ginger, soy sauce, and coconut milk. Add to pan, cover, then lower heat and simmer, turning meat occasionally, for about 2 minutes, or until it is cooked through.

4. Add lime juice, stir, and simmer for 1 more minute.
