How to make Medallions of Pork with Mushrooms

1 pound pork tenderloin
Butter-flavored cooking spray
½ cup thinly sliced shallots
1 cup thinly sliced fresh mushrooms
½ cup dry white wine
2 tablespoons concentrated chicken broth
¼ teaspoon dried thyme
2 teaspoons whole-grain mustard
¼ cup fat-free sour cream
Salt and pepper to taste
