Medallions of Pork with Mushrooms

Prep time: 5 minutes | Cook time: 20 minutes| Serves 4

1 pound pork tenderloin
Butter-flavored cooking spray
½ cup thinly sliced shallots
1 cup thinly sliced fresh mushrooms
½ cup dry white wine
2 tablespoons concentrated chicken broth
¼ teaspoon dried thyme
2 teaspoons whole-grain mustard
¼ cup fat-free sour cream
Salt and pepper to taste

1. Slice tenderloin into ½-inch slices.

2. In a medium nonstick skillet, heat cooking spray over medium-high heat
until hot but not smoking. Brown pork on both sides, then lower heat and
sauté for 3 minutes, until cooked through. Remove pork from pan.

3. Re-spray pan and sauté shallots and mushrooms, stirring until lightly
browned.

4. Stir in wine, scraping up any browned bits. Add concentrated chicken
broth and thyme and simmer for 2 minutes.

5. Stir in mustard and sour cream and simmer for 1 to 2 minutes. Add pork and any accumulated meat juices and turn pork to coat. Add salt and pepper to taste.
