Citrusy Crockpot Pork Tacos with Spicy Green Sauce

Prep time: 15 minutes | Cook time: 20 minutes| Serves 1

1 lb. pork country ribs
1/2 tsp. salt
1/2 tsp. ground black pepper
1 tsp. minced garlic
1/2 tsp. smoked paprika
1/2 tsp. ground chipotle pepper (optional)
2 c. Tropicana 50 no-sugar-added orange juice
1 tsp. orange zest
Green Sauce
1 bunch fresh cilantro
2 cloves garlic peeled
1 jalapeno pepper stems removed, and seeds removed if you don't want it
to be spicy
juice of one lime
2-3 tbsp. water
1 tsp. extra-virgin olive oil
1/4 c. unflavored Greek yogurt
tacos/toppings
1 head curly leaf lettuce
1 red bell pepper sliced into strips
1 orange bell pepper slice

1. In a crockpot, combine the ribs, salt, pepper, garlic, paprika, and
chipotle pepper (if using). Cook on low for 6 hours, covered with
orange juice, orange zest, and water. Allow the meat to continue
warming while shredding it with forks.

2. To prepare the sauce in a blender or food processor, add cilantro,
garlic, jalapeƱo, lime juice, olive oil, and Greek yogurt and pulse until
smooth. The sauce should be drizzleable. If it's too thick, add more
water and stir it again.

3. To prepare taco shells, remove the leaves from the bunch of curly leaf lettuce and break the steam with a big knife. Fill each taco with 1- 2 ounces of pork, peppers, 1 tbsp. Yogurt, and 1 tsp. green sauce.
