1. In a crockpot, combine the ribs, salt, pepper,
garlic, paprika, and

orange juice, orange zest, and water. Allow the meat to continue
warming while shredding it with forks.

2. To prepare the sauce in a blender or food
processor, add cilantro,
garlic, jalapeƱo, lime juice, olive oil, and Greek yogurt and pulse until
smooth. The sauce should be drizzleable. If it's too thick, add more
water and stir it again.

3. To prepare taco shells, remove the leaves from
the bunch of curly leaf lettuce and break the steam with a big
knife. Fill each taco with 1- 2 ounces of pork, peppers, 1 tbsp. Yogurt, and 1
tsp. green sauce.
