Braised Pork with Apples and Onions

Prep time: 15 minutes | Cook time: 30 minutes| Serves 4

1 pound pork tenderloin
Olive oil cooking spray
2 garlic cloves, minced
¼ teaspoon ground nutmeg
1 tablespoon ground fresh grated ginger
1 large onion, cut into ½-inch wedges (about 1½ cups)
2 medium Granny Smith apples, peeled, cored, and cut into ½-inch
wedges
2 packets artificial sweetener (Splenda or Truvia)
½ teaspoon ground cinnamon
½ cup water

1. Preheat oven to 350°F.

2. Place pork tenderloin in a baking pan that has been coated with cooking
spray.

3. In a small bowl, combine garlic, nutmeg, and ginger and rub onto pork.

4. Surround tenderloin with alternating wedges of onion and apple. Spray
onion and apple wedges with cooking spray, sprinkle with sweetener and
cinnamon, and pour water over onions and apples.

5. Cover with foil and bake for 20 minutes. Remove foil and bake for 10 minutes more.

6. Slice meat thinly and serve.
