Cheeseburger Scramble

Prep time: 5 minutes | Cook time: 15 minutes| Serves 4

Nonstick cooking spray
8 ounces lean ground beef
4 large eggs
½ cup canned diced tomatoes, drained
½ cup shredded Cheddar cheese
¼ teaspoon salt

1.Spray a large skillet with cooking spray and cook the ground beef over
medium heat for about 3 minutes, stirring frequently, until fully browned.

2.Remove the beef from heat. Drain the fat into a bowl or jar for disposal,
spoon the beef into a separate bowl or plate, and set aside.

3.Place the skillet back over medium heat and spray again with cooking
spray. Crack the eggs into a small bowl and beat well. Pour the eggs into
skillet and cook for 2 to 3 minutes, stirring frequently, until the eggs are
set.

4.Reduce the heat to low. Add the tomato, Cheddar cheese, beef, and salt
to the skillet and mix well, allowing the mixture to heat 1 to 2 more
minutes, or until cheese is melted.

5.Remove from the heat and serve.
