Italian-Style Scramble

Prep time: 5 minutes | Cook time: 5 minutes| Serves 4

Nonstick cooking spray
8 large eggs
1 cup canned diced tomatoes, drained
1 cup shredded mozzarella cheese
1 teaspoon Italian seasoning
1 teaspoon garlic powder
¼ teaspoon salt

1.Spray a large skillet with nonstick cooking spray and heat over medium
heat.

2.In a large bowl, combine the eggs, tomato, mozzarella cheese, Italian
seasoning, garlic powder, and salt and beat well until combined.

3.Pour the mixture into the skillet and cook for 3 to 5 minutes, stirring
frequently, until the eggs are set.

4.Remove from the heat and serve.
