Avocado-Lime Dressing

Prep time: 5 minutes | Cook time: 5 minutes| Serves 2

½ cup water
1 very ripe avocado
¼ cup low-fat plain Greek yogurt
¼ cup chopped fresh cilantro
3 tablespoons extra-virgin olive oil
Juice of 1 lime (about 2 tablespoons)
1 teaspoon minced garlic
¼ teaspoon ground cayenne pepper
¼ teaspoon freshly ground black pepper

In a blender or food processor, puree the water, avocado, yogurt, cilantro, olive oil, lime juice, garlic, cayenne pepper, and black pepper on mediumhigh speed until the dressing has a creamy texture and there are no chunks.
