Sugar-Free Egg Nog with Added Protein

Prep time: 15 minutes | Cook time: 20 minutes| Serves 1

4 egg yolks
1/3 c. Sola granular sweetener
1-pint Fairlife 2% milk
1 c. half and half
2 tsp. rum extract
1 tsp. nutmeg
4 egg whites
1 scoop unflavored protein powder

1. In a mixing bowl, beat the eggs with a stand mixer on low speed,
gradually adding the sweetener until it is all integrated. The color of
the egg yolks should brighten and thicken.

2. Combine the milk and half-and-half and heat in a saucepan over
low-medium heat. Bring to a boil before removing from the heat.

3. Begin whisking or beating the egg yolks for 2-3 seconds before
slowly ladling in a quarter cup of the heated liquid, continually
combining. To carefully raise the temperature of the eggs, add the
liquid in a moderate and steady stream. Repeat 3 times, finishing with
a 20-second egg/milk combination mix.

4. Stir the yolk/milk combination into the remaining boiling liquid in
the pan right away. Reduce the heat to low-medium and continue to
cook until the temperature reaches 160 degrees.

5. Stir in the nutmeg and rum essence. Transfer to a bowl, cover, and
chill for 2 hours.

6. Begin beating egg whites in a mixing dish or stand mixer, gradually
adding protein powder and more sugar. Beat until firm peaks form.

7. Remove the chilled yolk/milk combination from the refrigerator and
combine it with the egg white mixture. Fold the egg whites gently into
the yolk/milk mixture until completely mixed. The mixture will seem
thick and bubbling.

8. Keep refrigerated until ready to serve. The eggnog may be stored
in the refrigerator for up to a week.
