Stuffed Cubanelle Peppers

Prep time: 15 minutes | Cook time: slow cooker:6 to 8 hours |

Serves 4
6 oz. lean ground turkey
1 tsp. dried rosemary
1/2 tsp. garlic-infused oil.
1 tbsp. onions, chopped.
2 beef tomatoes finely diced.
1 tbsp. chives finely chopped.
Freshly ground black pepper
2 large cubanelle peppers

1. In a medium bowl, mix the ground turkey, dried rosemary, garlicinfused
oil, chopped onions, diced tomatoes, chives, and season well
with freshly ground black pepper. Set aside to marinate for 15
minutes. Make an incision across the length of the cubanelle peppers
and remove any seeds and membranes.

2. Divide the marinated ground turkey between the peppers. Place
the peppers in a heatproof dish that will fit the slow cooker snugly.
Cook on LOW for 6 to 8 hours. During cooking, spoon the released juices over the peppers for extra flavor.
