Smothered Pork Chops

Prep time: 15 minutes | Cook time: 30 minutes| Serves 4

4 pork chops, about ½ inch thick, trimmed of fat
1½ cups fat-free buttermilk
2 tablespoons sweet or smoked paprika
½ teaspoon freshly ground black pepper
2 tablespoons onion powder
1 tablespoon garlic powder
1 teaspoon cayenne pepper
Canola cooking spray
2 large onions, sliced
1 garlic clove, minced
1½ cups low-sodium chicken broth
½ cup reduced-fat sour cream
1 teaspoon hot sauce (or to taste)

1. Place pork chops in a large resealable plastic bag.

2. In a bowl, mix together buttermilk with paprika, pepper, onion powder,
garlic powder, and cayenne. Pour over pork chops, seal bag, and marinate
in refrigerator for 30 minutes.

3. Remove pork chops from bag and pat dry.

4. Spray large skillet with cooking spray and heat over medium-high heat
until hot but not smoking. Sauté pork for 2 minutes on one side, turn, and
cook for 2 minutes on the other. Remove chops from pan and keep warm.

5. Re-spray pan and heat until shimmering. Add onions and garlic and
cook, stirring, for 3 to 5 minutes, or until soft but not browned.

6. Lower heat, pour chicken broth into pan, and simmer for 10 to 12 minutes. Add sour cream and hot sauce and stir until smooth. Add pork chops back to skillet and simmer for 5 minutes.
