Pork with Onions and Capers

Prep time: 15 minutes | Cook time: 15 minutes| Serves 4

1 pound pork tenderloin
Butter-flavored cooking spray
1½ cups thinly sliced onion
½ cup dry vermouth
¼ cup water
2 teaspoons concentrated chicken broth
2 tablespoons capers
¼ cup fat-free sour cream
Salt and pepper to taste

1. Slice tenderloin into ½-inch slices.

2. In a large nonstick skillet, heat cooking spray over medium-high heat
until hot but not smoking. Sauté pork for about 2 minutes on each side,
then remove from pan.

3. Re-spray pan and add onion. Cook, stirring, for 3 to 4 minutes, or until
onion just starts to brown.

4. Add vermouth and water and simmer for 3 to 4 minutes, or until liquid is
reduced to about ¼ cup.

5. Stir in concentrated chicken broth and capers. Increase heat to high and
bring onion mixture to a boil, then cook until reduced by half.

6. Turn off heat, stir in sour cream, and add sliced pork and any
accumulated meat juices back to skillet. Turn pork slices to coat, and serve. Salt and pepper to taste.
