Air fried Chicken Satay with Cucumber Salsa

Prep time: 15 minutes | Cook time: 25 minutes | Serves 2

Olive oil cooking spray
6 oz. skinless, boneless chicken breasts, cubed.
1/2 tbsp. smooth peanut butter
1 cucumber, diced.
2 tbsp. chopped shallots.
1 tbsp. apple cider vinegar

1. Preheat the Air fryer to 350°F, and lightly coat the Air fryer Baking
Pan with the cooking spray. Coat the chicken cubes with the peanut
butter and arrange them in the Air fryer Baking Pan.

2. Place the pan in the Air fryer Basket, set the timer for 15 minutes,
or until the chicken is cooked through, giving the pan a shake halfway
through the cooking time to allow for even cooking.

3. While the chicken is cooking, make the cucumber salsa by
combining the cucumber, shallots, and apple cider vinegar in a small
bowl. Keep chilled until ready to serve.
