Very Berry Mug Crumble

Prep time: 10 minutes | Cook time: 3 minutes | Serves 1

About ½ cup mixed frozen berries or sliced autumn fruit
½ to 1 teaspoon brown sugar
¾ teaspoon cornstarch

Crumble:
3 tablespoons rolled oats
1½ teaspoons brown sugar
Pinch of ground cinnamon or ginger
1 teaspoon light butter or low-fat spread, melted

1. Place the frozen berries or autumn fruit in a small microwave-safe
mug (about ¾ cup)—they should almost fill the mug. Sprinkle over the
sugar to taste and the cornstarch. Microwave for 30 seconds. Stir
gently, trying to keep the fruit whole, then microwave for an additional
25 seconds, or until the sauces from the fruit start to thicken.

2. Meanwhile, for the crumble, place the oats in a small cup or bowl
and stir in the sugar, cinnamon or ginger, and butter or spread. Mix
well, then spoon over the partially cooked fruit mixture. Place the mug
inside a shallow bowl (since the mixture does have a tendency to
bubble over) and microwave for 75 seconds.

3. Let stand for 1 minute before serving with a little low-fat custard, yogurt, or low-fat ice cream, if desired.
