Apple Crumble

How to make AppleCrumble

Cook time: 45 minutes | Serves: 10

Cooking spray
6 honey crisp apples, cored, peeled, and cut into chunks
½ cup water
3 tsp stevia powder, divided
1 tbsp cornstarch
½ tsp cinnamon, ground
¼ tsp nutmeg, ground
½ lemon, juiced
¾ cup rolled oats
¾ cup whole wheat pastry flour
½ cup low-fat plain yogurt
¼ cup coconut oil, melted
Whipped topping

1. Heat the oven to 350°F gas mark 4. Coat a baking dish with
Cooking spray.

2. Place the apple chunks, water, 1½ teaspoons of stevia powder,
cornstarch, ground cinnamon, ground nutmeg, and lemon juice in the
baking dish, mix to combine. Bake for 20 minutes.

3. Meanwhile, in a medium-sized mixing bowl, add the rolled oats,
pastry flour, and the remaining 1½ tsp of stevia powder, mix to
combine. Add the plain yogurt and melted coconut oil. Stir until wellcoated.

4. Cover the baked apple mixture with the rolled oats mixture. Bake for 25 minutes, or until the topping is golden brown.

5. Cut into slices and serve with a tsp of whipped topping.
