How to make SouthwesternTomato Soup

Olive oil cooking spray
½ cup finely chopped onion
2 tablespoons minced garlic
½ teaspoon chili powder
½ teaspoon ground cumin
½ teaspoon dried oregano
1 bay leaf
1 (14½-ounce / 411-g) can diced tomatoes with liquid
1 (14½-ounce / 411-g) can fat-free, low-sodium chicken broth
½ pound (227 g) boneless, skinless turkey thighs (or any dark-meat
turkey), cut up
Salt and pepper, to taste

1. Coat bottom of a large soup pot with cooking
spray. Over medium heat, sauté onion and garlic for 3 minutes.

Stir in chili powder, cumin, oregano, and bay leaf. Add tomatoes,
chicken broth, and
turkey, and bring to a boil.

cover, and simmer for 45 minutes. Remove bay leaf.
4. Purée in batches in
a blender or food processor. Or you can use an immersion blender
and purée right in soup pot. Add salt and pepper to taste.
