Easy Broccoli Soup

How to make EasyBroccoli Soup

Prep time: 15 minutes | Cook time: 20 minutes | Serves 4
2 teaspoons butter
1 tablespoon minced onion
1 garlic clove, minced
3 cups chicken stock
4 cups broccoli florets
Salt and freshly ground black pepper, to taste
2 cups skim milk
½ cup shredded Colby cheese

1. In a large saucepan, melt butter and sauté onion until softened,
about 5 minutes, stirring frequently. Add garlic and sauté about 1
minute more, stirring constantly. Add chicken stock and broccoli to
pan, season to taste with salt and pepper and heat to a boil. Cover
pan, reduce heat and simmer until broccoli is softened, 10 to 15
minutes, stirring occasionally. 

2. Add milk to soup and stir until heated through, 1 to 2 minutes. 
3. Remove pan from heat, add cheese and stir until cheese is melted. Serve soup immediately and enjoy!
