White Bean Curry

How to make WhiteBean Curry

Prep time: 5 minutes | Cook time: 30 minutes | Serves 4

1 pound (454 g) white beans, soaked and rinsed
½ teaspoon red pepper
½ teaspoon ground turmeric
1 tablespoon onion powder
2 teaspoons garlic powder
1-2 teaspoons salt
1 bay leaf
6 cups unsalted vegetable broth
Boiled white rice to serve

1. Add all the listed ingredients except the white rice to the Instant Pot.

2. Cover and secure the lid. Turn its pressure release handle to the sealing position.

3. Cook on the Bean/Chili function on the default settings.

4. After the beep, do a Natural release for 20 minutes.

5. Stir and serve hot with boiled white rice.
