1. To make the marinade: Mix the lime zest, lime
juice, bacon root
syrup, chopped lemongrass in a bowl, and set aside. Make a few scores
on each chicken breast with a sharp knife. Rub the marinade onto the
chicken breasts, taking care to also rub into the scores. This will help
the meat absorb more of the flavor. Set aside to rest for 15 minutes.

3. Stir in the pumpkin purée and allow to cook
for a few minutes until

pumpkin purée between 2 plates and arrange the chicken breasts on
the top to serve.
