Sirloin Steak With Garlic And Red Wine Mushrooms

Prep Time: 5 Minutes | Cook Time: 20 Minutes| Serves 4

2 tablespoons extra-virgin olive oil, divided
8 ounces mushrooms, sliced
1 cup red wine
4 garlic cloves, thinly sliced
½ teaspoon dried thyme
1 pound sirloin steak
Salt
Freshly ground black pepper

1.In a large nonstick skillet over medium-low heat, warm 1 tablespoon
olive oil. Add the mushrooms and toss them in the olive oil. Cook for about 5 minutes, stirring occasionally.

2.Add the red wine, garlic, and thyme and cover the skillet. Reduce the heat to low and cook for another 5 minutes, until the liquid has reduced by half.

3.Meanwhile, season the steak with salt and pepper.

4.Heat another large nonstick skillet over medium-high heat and warm the
remaining 1 tablespoon olive oil for about 30 seconds. Add the steak to the
skillet and cook for 5 minutes. Flip and cook for another 5 minutes.

5.When the steak has reached an internal temperature of 145°F for medium—or is cooked to your liking—remove from the heat and place on a platter to rest for 5 minutes.

6.Slice the steak against the grain and top with the mushrooms.
