Orange Arugula Salad with Smoked Turkey

Prep time: 15 minutes | Cook time: 10-15 minutes | Serves 4

3.5 oz arugula, torn.
3.5 oz lamb's lettuce, torn.
3.5 oz lettuce, torn.
8 oz smoked turkey breast, chopped into bite-sized pieces.
2 large oranges peeled and sliced.

For dressing:
¼ cup Greek yogurt
3 tbsp lemon juice
1 tsp apple cider vinegar
¼ cup olive oil

1. Combine arugula, lamb's lettuce, and lettuce in a large colander.
Wash thoroughly under cold running water and drain well. Tear into
small pieces and set aside.

2. Now, combine vegetables in a large bowl. Add turkey breast and
toss well. Then add sliced oranges and set aside. Place Greek yogurt in a small bowl. Add lemon juice, apple cider, and olive oil. Whisk together until thoroughly combined. Drizzle over salad and serve.
