The Griddle Cakes Recipe These sweet cakes are crisp on the outside and moist in the center.
Special equipment:
griddle or large cast-iron frying pan
Ingredients:
1 1⁄3 cups stone-ground whole wheat flour
1½ tsp baking soda
1½ tsp salt
1 cup rolled oats
3 tbsp brown sugar
2 cups buttermilk
unsalted butter, melted, for greasing
Method:
1 Put the flour, baking soda, and salt into a large bowl.
2 Stir in the oats and sugar, and make a well in the center. Pour the buttermilk into the well. Stir, gradually drawing in the dry ingredients to make a smooth batter.
3 Heat a griddle or a large cast-iron frying pan to medium-low.
4 Brush the heated griddle with melted butter. Using a small ladle, drop about 2 tablespoons batter onto the hot surface.
5 Repeat to make 5–6 cakes. Cook for about 5 minutes, until the undersides of the griddle cakes are golden brown and crisp. Turn and brown them on the other side for about 5 minutes longer.
6 Transfer to a platter, cover, and keep warm. Continue with the remaining batter, brushing the griddle with more butter as needed. Serve the cakes warm with plenty of butter and jam.
