Ingredients
1½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
1 cup granulated sugar
½ cup vegan butter substitute,
at room temperature
½ cup soymilk
2 tablespoons maple syrup
2 teaspoons white or
cider vinegar
1 teaspoon ground cinnamon
1 teaspoon finely grated
orange peel
5 cups peeled and sliced apples (about 5 medium apples)
⅓ cup chopped walnuts (optional)
⅓ cup raisins(optional)
½ teaspoon ground nutmeg (optional)
Method
Preheat the oven to 350 degrees F and oil a 9-inch springform pan.
Combine the flour, baking powder, and baking soda in a bowl. In a separate large bowl, combine the sugar and vegan butter substitute and beat with a wooden spoon until smooth.
Beat in the soymilk, maple syrup, vinegar, cinnamon, and orange peel. Add the flour mixture and stir until just combined. Gently fold in the apples and the optional walnuts, raisins, and nutmeg.
Pour into the prepared pan and bake for 1 hour and 5 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean. Cool on a rack. Store leftover cake tightly covered in the refrigerator.
Pear Cake:
Replace the apples with 5 cups peeled and sliced pears (about 6 medium pears). If the pears are very juicy, blot them with paper towels before folding them into the batter.
Tips
You can use a single kind or a combination of apples. If using Granny Smith apples or other apples that are extra tort, add an extra tablespoon
of maple syrup. Any apples except Red Delicious will work in this recipe.
