Filipino Paksiw na Pata

The Filipino Paksiw na Pata (Pork Hocks in Special Sauce) Recipe Serves 4

Filipino Paksiw na Pata
2 lbs. pork hocks
1/3 cup vinegar
1/4 cupsoysauce
in cup water
1/4 cup packed brown sugar
in cup dried banana blossoms (optional)
I bay leaf
2 cloves garlic, minced
1/4 teaspoon black peppercorns
salt to taste
dash of oregano and cloves

Combine all ingredients together in a deep pot. Bring to a boil over medium high heat.

Reduce heat to medium low, cover and simmer for 3 hours or more until meat is tender. If you choose to include banana blossoms, soak it first in water and remove its hard tips.

Turn meat occasionally while cooking. Remove fat that will accumulate on top of the sauce when cooked. Serve with steamed rice.
