wild rice and turkey casserole

The wild rice and turkey casserole recipe prep time: 10 minutes start to finish: 1 hour 15 minutes 6 servings

2 cups cut-up cooked turkey or chicken
2 1⁄4 cups boiling water
1⁄3 cup fat-free (skim) milk
4 medium green onions, sliced (1⁄4 cup)
1 can (103⁄4 oz) condensed 98% fat-free cream of mushroom soup
1 package (6 oz) originalflavor long-grain and wild rice mix

1 Heat oven to 350°F. In ungreased 2-quart casserole, mix all ingredients, including seasoning packet from rice mix.

2 Cover casserole. Bake 45 to 50 minutes or until rice is tender. Uncover; bake 10 to 15 minutes longer or until liquid is absorbed. If desired, sprinkle with additional green onion.

Notes and Tips:
This super-easy casserole is low in fat and cholesterol. Keep with this healthy trend and serve it with whole wheat rolls and fresh green beans.
