Stir Fried Lamb with Mint and Chilli

Stir Fried Lamb with Mint and Chilli Recipe make sure you slice lamb across the grain this will minimise the meat breaking up and shrinking when cooking.

Ingredients:
1 tablespoon oil
750 g lamb fillet, thinly sliced
4 cloves garlic, finely chopped
2 small fresh red chillies, thinly sliced
1/2 cup (80 ml) oyster sauce
2 1/2 tablespoons fish sauce
1 1/2 teaspoons sugar
1/2 cup (25 g) chopped fresh mint
1/4 cup (5 g) whole fresh mint leaves

Method:
Heat a wok over high heat, add the oil and swirl to coat.

Add the lamb and garlic in batches and stir-fry for 1-2 minutes, or until the lamb is almost cooked.

Return all the lamb to the wok. Stir in the chilli, oyster sauce, fish sauce, sugar and the chopped mint leaves, and cook for another 1-2 minutes.

Remove from the heat, fold in the whole mint leaves and serve immediately with rice.
