Serves 6 to 8
Ingredients:
1 1/2 kilos pakwan (watermelon), peeled, seeded
and cut into chunks
2 cups sliced tomatoes
1 kilo beef short ribs, stewed about 1 hour
to tenderize
1 kilo pork belly, cut into chunks
1/2 kilo gabi, peeled and sliced
I large onion, quartered
1 medium radish, cut into 1/2-inch thick rounds
4 suing haba
1 bundle okra, trimmed and sliced about
2-inches long
1 bundle sitaw, trimmed and cut 2-inches long, or string beans
1 —2 40-gram pack sinigang mix water
1 bundle kangkong, trimmed
patis (fish sauce)
Method:
In a pot, arrange watermelon in the bottom followed by tomatoes, the pre-stewed beef short ribs and pork belly.
Cook over high heat then reduce heat to simmer until watermelon chunks start to melt and liquefy.
After 30 minutes, add gabi and onions. Keep simmering for another 30 minutes or until meat is fork tender, Add radish, siling haba, okra and sitaw
Cook for about 10 minutes or until vegetables are crisp tender.
Blend sinigang mix with a little water and pour into pot.
Add kan gkong stems and leaves. Simmer for about 1 minute. Serve with patis.
