Ingredients:
Serves 6
1 Kilo ox tripe
3 tablespoons cooking oil
1/2 head native garlic, minced
2 onions, minced
4 cups water
1 cup ground peanuts (or peanut butter), mixed with
1/2 cup hot water
2 cups coconut milk (preferably kakang gata),
divided in half
achuete seeds, soaked in warm water for 10 minutes
1 cup finely ground rice
salt and pepper, to taste
sitaw, cut into 2-inches lengths
banana heart, sliced
eggplants, sliced diagonally
Method:
Cut the ox tripe in 2 x 2-inch sizes. Put ¡n a pressure cooker to tenderize, following manufacturer’s directions. Drain and set aside.
In a large stockpot, heat oil and sauté garlic, onions and the tenderized ox tripe. Pour in water.
Add the peanut mixture and cook for 10 minutes, Bring to a boil.
Pour ¡n 1 cup of the coconut milk. Cook for another 10 minutes then add the remaining coconut milk.
In a bowl, strain the soaked achuete seeds. Discard the seeds and pour the colored water ¡rito the pot. Add the ground rice to thicken liquid. Season with salt and pepper.
Add the vegetables and simmer until vegetables are tender.
Serve hot with rice and bagoong.
