Ingredients:
Serves 4 to 6
i KIlO uoneess pork ueiiy, stcin and fat trimmea,
leaving about 1/2-inch of fat on the meat
For the marinade
1 cup white vinegar
2 teaspoons rock salt
1 1/2 tablespoons white sugar
1/2 tablespoon minced garlic
1/8 teaspoon ground black pepper
For basting
1/4 cup garlic üyster sauce
1/4 cup reserved marinade
1/4 teaspoon dried chili pepper flakes
Method:
Slice the trimmed pork belly into long strips, 1-inch thick, Arrange in a deep baking dish.
Mix the marinade, reserving 1/4 cup fo the basting sauce, and pour over the pork belly.
Marinate for at least 2 hours before grilling, regularly piercing flesh to allow marinade to penetrate meat.
Mix the basting sauce. Grill marinated pork belly over hot cDals.
Baste with the basting sauce occasionally.
Make sure to put out leaping flames fueled by the dripping fat wilh a sprinkling of water.
Serve with a dip of vinegar and chili.
