Ingresdients:
Makes around 8 skewers
1/2 Kilo large shrimp (about 16 pieces), peeled
and deveined
2 large green bell peppers, sliced into 1-inch squares
2 large red bell peppers, sliced into 1 -inch squares
1/2 cup bottled barbecue marinade (use local variety)
4 tablespoons olive oil
1/2 cup rice wine
4 tablespoons honey
2 tablespoons minced garlic
Method:
If using wooden barbecue sticks soak in water for 30 minutes to prevent burning.
Skewer 2 shrimps and 3 squares ci green and red bell peppers alternately through 1 pre-soaked barbecue stick.
Repeat with remaining shrimp and peppers. Arrange in a plastic container.
In a bowl, combine barbecue marirade, olive oil, rice wine, honey and garlic.
Pour half of the marinade over shrimp and reserve the other half of the marinade for basting. Marinate kebabs in a
covered container for 20 minutes. Keep container in a cool place until ready to cook.
Heat outdoor or stovetop grill. Remove shrimp kebabs from marinade and discard marinade.
Grill kebabs for about 6 minutes, or until shrimp arc fully cooked, turning and basting with the reserved marinade. Serve warm.
