Irmas Frosted Eggnog Logs Recipe from Sally TeStrake. Holiday Dessert bake-off Christmas Special recipe
Ingredients
3 cups all-purpose flour
1 teaspoon ground nutmeg
1 cup butter or margarine
3/4 cup sugar
1 egg
2 teaspoons vanilla
1 teaspoon rum flavoring
Rum Frosting
Method
1. In a mixing bowl, stir together the flour and nutmeg.
2. In a large mixing bowl, beat butter or margarine for 30 seconds. Add sugar and beat till fluffy. Beat in the egg, vanilla and rum flavoring till combined. Add dry ingredients and beat well.
3. Shape dough into 3 inch-long logs, about 1/2 inch wide. Arrange on ungreased cookie sheets.
4. Bake in a 350 degree oven for 15 to 17 minutes or till golden. Remove and cool on wire racks.
5. Meanwhile, prepare the Rum Frosting. Frost tops of the cooled cookies with the frosting. Mark frosting lengthwise with tines of a fork to resemble bark.
6. Sprinkle with additional nutmeg. Makes about 54 cookies.
7. Rum Frosting: In a mixing bowl, beat together 3 tablespoons softened butter or margarine, 1/2 teaspoon rum flavoring and 1/2 teaspoon vanilla.
8. Beat in 1/2 cup sifted powdered sugar.
9. Gradually add more sifted powered sugar (about 2 cups) and 2 to 3 tablepoons evaporated milk, cream or milk, beating till the frosting spreads easily over the cookies.
10. Tint the frosting with food coloring, if you like.
