Eight Treasure noodle Soup

Ingredients 
10 g (3/4 oz) dried dhiitake mushrooms
375 g (13 oz) fresh thick hokkein (egg) noodles
1.2 litres (42 fl oz/ 1/4 cup) lightly sauce
2 teaspoons chinese rice wine
200 g (7 oz) boneless, skinless chicken breasts, cut into 1 cm (1/2 inch) strips on the diagonal
200 g (7 oz) chinese barbecued pork (char siu) cut into 5 mm (1/4 inch) slices 1/4 onion, finely chopped
1 carrot, cut into 1 cm (1/2 inch) sliced on the diagonal
120 g (4 1/4 oz) snow peas cut in half on the diagonal
4 bulb spring onions (scallions), thinly sliced

Method 
1. Soak the mushrooms in boiling water for 20 minutes or until soft. 

2. Drain and squeeze out any excess liquid. Discard the sterms and thinly slices the caps

3. Bring a large saucepan of water to the boil and cook the noodles for 1 minute, or until cooked through. 

4. Drain then rinse with cold water. Divide evenly among four deep warmed serving bowls.

5, Meanwhile, bring the chicken stock to the boil in large saucepan over high heat. 

6. Reduce the beat to medium and stir in the soy sauce and rice water. Simmer for 2 minutes. Add the chicken is cooked and the pork is heated through. 

7. Add the onion, carrot, snow peas, mushrooms and half the spring onion, and cook for 1 minute, or until the carrot is tender.

8. Divide the vegetables and meat among the serving bowls and ladle on the hot broth, Garnish with the remaining spring onions
