Tarragon and thyme mustard

Tarragon and thyme mustard If you like, you can make tarragon and thyme mustard by adding a little chopped fresh tarragon and thyme to a grainy mustard. Great Vegetarian recipe.

Serves: 4—6 
Preparation: 20—30 mins, plus chilling

Ingredients 
chicken I x 2 kg (4 lb). roasted and cooled
celery sticks 4, sliced
red dessert apple I, cored and chopped
green pepper I , chopped
butter lettuce 4, separated into leaves
toasted slivered almonds 25 g
(2 tablespoons)
Dressing:
mayonnaise 4 tablespoons
sour cream 4 tablespoons
tarragon and thyme mustard 2 tablespoons
salt and pepper

To garnish:
tarragon leaves
celery leaves

Method 
Skin the chicken and chop it into bite-sized pieces. Mix them with the celery, apple and green pepper.

Make the dressing. Mix the mayonnaise with the sour cream, mustard, salt and pepper. Fold evenly into the chicken salad and chill lightly.

Line plates with the lettuce and top with the chicken salad. Sprinkle with the toasted almonds and garnish with tarragon and celery leaves.
