Stuffed Pork Chops

Ingredients 
Serves 2
2 pork chops, each cut 1 1/2- inches thick
2 teaspoons salt
1 teaspoon pepper
2 teaspoons calamansi juice
3 teaspoons paprika
3 tablespoons butter
1/2 cup spinach, blanched in
boiling water and dried well 
2 tablespoons grated cheese
2 tablespoons chopped cooked
bacon
1 teaspoon pepper
cooking oil

Method
Marinate pork chops in salt, pepper, calamansi and paprika. Cut a slit on the fat side of each chop to create a pocket. Set aside.

In a skillet, heat butter and sauté spinach. Add cheese, bacon, and pepper. Let cool. 

Stuff mixture into pockets of pork chops. In a skillet heat oil and sear pork chops.  Lower heat and cook chops 4 to 8 minutes per side or until just cooked through.
