Potato Cauliflower Mash is a great substitute for mashed potatoes. Low in carbs and high in nutrients the cauli-taste is very mild. the kids and adults love it
Ingredients
3 cups water
2 cups cubed Yukon Gold potatoes,
skin on, (about 12 ounces)
10 ounces frozen
cauliflower florets
1/4 cup fat-free
evaporated milk
2 tablespoons
margarine, trans-fat free
3/4 teaspoon salt
¼ teaspoon black pepper
Method
1. Bring water to boil in a large saucepan.
2. Add potatoes and cauliflower and return to Reduce heat. Cover and simmer 10 minutes or until potatoes are tender.
3. Remove from heat and drain. Place vegetables and remaining ingredients in blender container and blend until smooth, scraping sides frequently. Makes 4 (‘/2-cup) servings
