Pears with Apricot Ginger Sauce

Pears with Apricot Ginger Sauce let your slow cooker take some of the work out of your busy. Nice for thanksgiving recipe

Ingredients
Nonstick cooking
spray
1/4 cup water
whole firm pears,
peeled with stems
attached, about 2
pounds total
1 tablespoon lemon juice
2 tablespoons apricot
fruit spread
1 teaspoon grated gingerroot
1/2 teaspoon vanilla
1/2 teaspoon cornstarch

Method 
1. Coat slow cooker with cooking spray. Add water and arrange pears, stem side up. Spoon lemon juice over pears. Cover and cook on HIGH for 2½ hours.

2. Remove pears and set aside on serving platter.

3. Combine remaining ingredients in a small bowl. Stir until cornstarch dissolves.

4. Add mixture to the water ¡n slow cooker, whisking until blended. Cover and cook on HIGH for 15 minutes or until sauce thickens slightly. 

5. Spoon sauce over pears. Serve warm or room temperature. Makes 4 servings

Notes for Pears with Apricot Ginger Sauce: Use a vegetable peeler for easy peeling.
