Moroccan Chicken In typical Moroccan fashion, the chicken is rubbed with pungent spices and herbs before cooking so that it is well flavored.

Ingredients
onion 1. very finely chopped
paprika 2 teaspoons
cumin seeds I teaspoon
skinless chicken fillets 500 g (lib)
cilantro I bunch, finely chopped
lemon juice 4 tablespoons
olive oil 3 tablespoons
salt and pepper
To serve:
harissa 40 g (3 tablespoons)
boiled rice
Method
Mix the onion with the paprika and cumin seeds and rub the mixture into the chicken fillets.
Meanwhile, heat a grill pan. Grill the chicken for I 0 minutes on each side, turning once, then remove from the pan.
In a large bowl, mix the cilantro with the lemon juice, oil, salt and pepper. Add the chicken and toss well. Serve with harissa and boiled rice.
Tips
This is a very spicy North African condiment made primarifr with dried red chiles. You can find it in good supermarkets and specialty stores.
