Mashed Sweet Potatoes the syrup adds lots of flavor. Many people liked this one, but we couldn't eat to much at a time since the flavor was kind of strong. Great recipe
Ingredients
2 large sweet potatoes (about 1/4 pounds)
1/4 cup fat-free half and half
3/4 teaspoon salt
1/4 teaspoon cinnamon
¼ teaspoon ground red pepper
¼ cup chopped pecans.

Method
1. Peel potatoes. Cut into chunks. Place in medium saucepan and cover with water.
2. Cover and bring to a boil over high heat. Reduce heat and simmer until potatoes are tender, about 15 minutes. Drain and return to pan.
3. Add half and half, salt, cinnamon and red pepper Mash with a potato masher. Top with pecans. Makes 6 (½-cup) servings
