Lemon Chile Chicken nice and very ferfreshing Main dish, nice for thanksgiving occasion, serve for more.

Ingredients
chicken 1 x 1.75 kg ( 3 1/2 Ib), cut into 8 pieces
garlic cloves 8
lemons 4, juiced, skins reserved
red chile I small, deseeded and chopped
orange blossom honey 2 tablespoons
chopped parsley 4 tablespoons
salt and pepper
parsley sprigs to garnish
Method
Put the chicken pieces into a shallow oven- proof dish. Crush 2 of the garlic cloves and mix them with the lemon juice. chile and honey.
Pour over the chicken and tuck the lemon skins into the dish.
Cover and marinate overnight turning the chicken once or twice. Turn the chicken pieces skin-side up, scatter with the remaining whole garlic cloves and put the lemon skins cut-side down on top.
Roast ¡n a preheated oven, 200°C (400°F). for 45 minutes or until golden brown and tender.
Stir in the parsley, salt and pepper. Serve with the lemon skins and parsley sprigs.
