Harira

Harira is a thick Moroccan soup, which is both wholesome and rich in flavor. thanks for my best friend Aileen Michelle Gencianos recipe. Love it, Very Luxury recipe

Serves: 4 
Preparation: 25 mins, plus soaking
Cooking: about 23h hours

Ingredients 
dried chickpeas or garbanzo beans 250 g
(8 oz). soaked, rinsed and drained
boneless, skinless chicken breasts 2. halved
chicken stock 1.2 litres (4 cups)
water 1.2 litres (4 cups)
canned chopped tomatoes 800 g (28 oz)
saffron threads 4 teaspoon, crumbled
(option al)
onions 2, chopped
white long-grain rice 125 g ( cup)
green lentils 50 g ( cup)
finely chopped cilantro 2 tablespoons
finely chopped parsley 2 tablespoons
plain yogurt to drizzle
cilantro leaves to garnish
salt and pepper

Method 
Put the chickpeas in a saucepan. cover generously with water and bring to a boil. Lower the heat and simmer, half covered, until tender, adding more water as necessary. 

This will take up to 2 hours. Drain and set aside. Bring the chicken breasts, stock and water to a boil in a second pan. Lower the heat, cover and simmer for I 0 minutes until the chicken is just cooked. 

Shred the chicken and reserve the stock. Simmer the chickpeas, tomatoes, saffron, if using onions, rice and lentils in the stock, covered, for 30—35 minutes. or until the rice and lentils are tender.

Add the chicken and herbs and heat for 5 minutes without boiling. Season. Serve with cilantro and drizzled with plain yogurt
