Grilled Chicken Fajitas

Grilled Chicken Fajitas a mixture of citrus juices adds zesty flavor to popular Mexican fajitas cooked on an outdoor grill or indoor grill. Fabulous luxury recipe

Serves: 4 
Preparation: 20 mins, plus marinating
Cooking: 15—20 mins

Ingredients 
skinless chicken fillets 500 g (I lb)
soft tortillas 4 large
sour cream ISO ml (4 pint)
tomatoes 4, skinned and sliced
avocado I, sliced
scallions 4, sliced
red onion , sliced
salt and pepper
tortilla chips to serve (optional)

Marinade:
soy sauce 2 tablespoons
fresh root ginger 3 cm (I 4 inches), finely
chopped
garlic cloves 2, finely chopped
olive oil 2 tablespoons
cilantro I bunch, chopped
chile l.chopped
lime juice 2 tablespoons

Method 
Mix all the ingredients for the marinade in a shallow dish and marinate the chicken ¡n the refrigerator for 24 hours.

Heat a grill pan. Grill the chicken fillets for 7- I0 minutes on each side. Remove from the pan and slice into long strips.

Cook the tortillas under a preheated broiler for 30 seconds on each side. 

Spread one side with some sour cream, sliced tomato, avocado. scallions and red onion. Add the chicken and season.Tightly roll up each tortilla and cut in half.

Serve the fajitas with tortilla chips. if you like.
