Cypriot Chicken and HALOUMI SALAD

Cypriot Chicken and HALOUMI SALAD the Haloumi is a good cooking cheese as it keeps its shape well when it is grilled or fried. nice grilling entairtainment recipe, serve for special luxury occasion.

Serves: 4 Prep: 20 mins, plus marinating
Cooking: 23—28 mins

Ingredients 
chicken fillets 375 g (> Ib), cut into chunks
oregano I bunch, chopped
olive oil I tablespoon
haloumi cheese 250 g (8 oz), sliced into 8

Cypriot salad:
cucumber I, skinned, deseeded and cut into 
matc hsticks
beefsteak tomatoes 4, skinned, deseeded
and cut into wedges
red onion I, finely chopped
flat leaf parsley I bunch, roughly chopped
olive oil 3 tablespoons
wine vinegar I tablespoon
salt and pepper

Method 
Marinate the chicken with the oregano. olive oil, salt and pepper at room temperature for 2 hours.

Heat a grill pan and grill the chicken chunks for 15—20 minutes. Keep them warm.

Meanwhile, make the salad. Mix the cucumber, tomatoes, onion and parsley with the oil and vinegar. Toss and season.

Grill the haloumi slices for 4 minutes on each side and serve with the chicken and salad.
