Crispy Cabrales and Phyllo Sandwiches

Crispy Cabrales and Phyllo Sandwiches filled with a creamy mixture of pungent Cabrales, cream cheese, and Manchego are simple to make and yet dramatic in appearance. The phyllo is baked until brown and crispy, then the cheese filling, Crispy Cabrales and Phyllo Sandwiches is sandwiched between two phyllo triangles. You can stand the sandwich constructions on their sides to serve them.

Ingredients 
¼ cup grated cured Manchego or Manchego-style
goat cheese
¼ cup crumbled Cabrales
1⁄3 cup cream cheese
½ cup plus 1½ tablespoons heavy cream, divided use
¼ cup sugar
1 teaspoon soy sauce
4 sheets phyllo dough

Method 
1. Bring the cheeses to room temperature.

2. Combine ½ cup of the heavy cream with the sugar and stir gently with a whisk until the sugar has dissolved. Set aside.

3. Mash the grated Manchego, the Cabrales, and the cream cheese together in a mixing bowl with the remaining heavy cream and the soy sauce.

4. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment. Transfer a sheet of phyllo carefully to the parchmentlined baking sheet. Brush lightly but thoroughly with the cream mixture and place another sheet on top. 

5. Brush the top phyllo sheet with the cream mixture. Cut the phyllo into 3-inch (8 cm) triangles, using a pizza cutter. Separate the triangles slightly. 

6. Place the sheet pan in the oven and bake for 6 to 7 minutes, until light to medium brown and crisp. Remove from the oven. Repeat with the remaining phyllo.

7. Top 16 of the triangles with 1 to 2 tablespoons of the mashed cheeses. Then place another phyllo triangle on top of each one to form sandwiches. Adapted from a recipe by Pedro MorĂ¡n
