Chicken with Mozzarella and Sun Dried Tomatoes is a chicken breasts are delicious served with roasted vine tomatoes and arugula.

Ingredients
boneless, skinless chicken breasts 4
mozzarella cheese 125 g (4 oz), cut into
4 thick slices
sun-dried tomatoes in oil 4 large pieces,
drained
olive oil 2 tablespoons
Parma ham 8 slices
pepper
lemon wedges to serve (optional)
Method
Make a long horizontal slit through the thickest part of each chicken breast without cutting all the way through.
Stuff with a slice of mozzarella and a piece of sun-dried tomato. Season with pepper.
Heat the oil in a shallow flameproof casserole, add chicken breasts and fry for 4 minutes on each side, then cook ¡n a preheated oven, 200°C (400°F), for 15 minutes. Meanwhile, pan-fry the ham for I minute, just to make it crispy.
Serve the chicken pieces. each topped with 2 slices of Parma ham and a wedge of lemon, if you like.
