Chicken with Chile Jam

Chicken with Chile Jam is a Deliciously thick chile jam add spice to simple grilled chicken. very luxury recipe for special thanksgiving occasion.

Serves: 4

Cooking Time: 25 mins

Ingredients 
boneless chicken breasts 4
rice noodles to serve
cilantro leaves, to gamsh
Chile jam:
fresh chiles 125 g (1/2 cup), cored, deseeded
and chopped
garlic clove 1, crushed
onion 1, chopped
fresh root ginger 5 cm (2 inch) chopped
white vinegar 125 ml (1/2 cup)
sugar 500 g (2 cups)

Method 
Make the chile jam. Put the chiles, garlic, onion, ginger. vinegar and sugar into a small saucepan. bring to a boil, then simmer for 15 minutes.

The mixture should be thick, sticky and jam-like, and will become more so, as it cooks.

Meanwhile, heat a grill pan. Cook the chicken breasts on the grill, skin-side down, for 10 minutes. Turn them over and cook for 10 minutes more.

Serve the chicken on a bed of rice noodles, wrth the chile jam poured over the top. and garnish with cilantro.

Tips
Don’t forget to wash your hands thoroughly after chopping the chiles as they will burn, or, better still, wear rubber gloves.
