Ingredients
chicken fillets 500 g (lib)
extra virgin olive oil 2 tablespoons
garlic cloves 2, crushed
ground cumin teaspoon
ground turmeric teaspoon
paprika teaspoon
lemon juice 2 teaspoons
To garnish:
pomegranate seeds 2 tablespoons
lemon wedges
cilantro sprigs
Method
Cut the chicken into long thin strips and marinate for 2 hours, covered, with the olive oil, garlic, spices and lemon juice.
Thread the chicken strips on to 8 small wooden skewers.
Grill the chicken skewers for 4—5 minutes on each side, until charred and cooked through.
Serve with couscous and garnish with the pomegranate seeds, lemon wedges and cilantro sprigs.
