Boiled Beef with Green Sauce

2 large carrots
1 leek
175 g celery
1 parsley root
1 onion
10 eggs
2 tablespoons wine vinegar

10 Herbal e.g. Dill, watercress, parsley, chervil, borage, tarragon, Pimpernell, lovage, sorrel, lemon balm, chives

Method
