Ingredients
3 cups cooked mashed sweet potatoes
1/2 cup each sugar and milk
1/4 cup butter, melted
2 eggs, lightly beaten
1 teaspoon vanilla extract
Dash salt
TOPPING:
1/4 cup each sugar and all-purpose flour
1 can (8 ounces) crushed pineapple,
undrained
1/4 cup butter, melted
2 eggs
Method
1 In a large bowl, combine the first seven ingredients. Pour into a lightly greased 9-in. square baking dish. Combine the topping ingredients; pour over potato mixture.
2 Bake, uncovered, at 350° for 45-50 minutes or until a knife inserted near the center comes out clean. Yield: 8-10 servings.
